About Harada Knives

The Harada Craftsman Collection at MUSASHI JAPAN features a selection of knives meticulously handcrafted by Harada Takayuki, a master artisan specializing in engraved steel craftsmanship. Many of the knives crafted by Harada are made using Shirogami #2 (White #2) and VG10 steel. While VG10 is commonly manufactured using press processing today, Harada’s VG10 knives are carefully hand-forged one by one using traditional techniques from Sakai. This hand-forging process brings out the full potential of the material, resulting in knives with excellent durability, well-balanced sharpness, and superior corrosion resistance.

What are Harada Knives made of?

The collection primarily utilizes White Steel #2 (Shirogami #2), renowned for its ability to achieve an exceptionally sharp edge, making it ideal for precise cutting tasks.Rockwell Hardness (HRC):White Steel #2 (Shirogami #2): Typically hardened to HRC 61–62, offering a balance between sharpness and ease of sharpening. Shirogami #2 is a high-carbon steel known for its extremely sharp edge and ease of sharpening, and it is highly regarded by professional chefs. Although it is prone to rust, Shirogami #2 offers a uniquely satisfying feel as it gradually adapts to the user’s hand over time, making it a very appealing material for those who value exceptional sharpness.
