Yoji Satake

Kyoto, Japan

Yoji Satake is the eleventh-generation chef of Minokichi, a Kyoto kaiseki restaurant with a history spanning 310 years since the Edo period. Each month, the tableware, ingredients, and dishes are entirely renewed, following a calendar of twelve ever-changing menus that trace the turning of Japan's seasons.
